چکیده

Of the many methods that have been proposed for the direct chemical determination of vitamin C in plant. and animal tissues, those based upon the reduction of 2 ,Bdichlorophenol indophenol have been adopted far more widely than others. The original indophenol procedure proposed by Tillmans and associates (1) a short time before the vitamin was isolated and identified (2) was soon modified in varying degrees in a number of laboratories (3-6). The indophenol method depends upon the fact, that vitamin C is the major or only natural tissue component which reduces the dye rapidly in an acid solution (e.g. pH 2 to 4). The present, paper deals primarily with the value of having metaphosphoric acid in the acetic acid or trichloroacetic acid used for extracting and titrating the vitamin. In general we have found the procedure outlined by Bessey and King (5) more satisfactory than other methods which have been proposed for tissue analysis, and many other laboratories appear to have had essentially the same experience. The first suggestion of using metaphosphoric acid which came to our attention was in the paper by Fujita and Iwatake (7).

The Effect of Metaphosphoric Acid and Some Other Inorganic Acids on the Catalytic Oxidation of Ascorbic Acid”

The instability of ascorbic acid in weakly acid solutions has recently been shown to be due to the copper content of the solutions (1). By strict elimination of copper, solutions of ascorbic acid are stable below pH 7.6. The preparation of copper-free reagents, however, is not very practical and in analytical procedures would not eliminate copper contamination from the materials analyzed. The u...

اندازه گیری میزان ویتامین ث با روش تیتراسیون دو مرحله ای اکسیداسیون – احیا در انواع مرکبات

Background and purpose:Epidemiological evidence has suggested that consumption of fruits reduces the risk of chronic diseases such as cancer and cardiovascular disease. These benefits are often attributed to their high antioxidant components such as vitamin C (ascorbic acid). Citrus species are extremely rich sources for this vitamin, therefore we decided to determine the amount of vitamin C ...

Reduction of dehydroascorbic acid at low pH.

Ascorbic acid and dehydroascorbic acid are unstable in aqueous solution in the presence of copper and iron ions, causing problems in the routine analysis of vitamin C. Their stability can be improved by lowering the pH below 2, preferably with metaphosphoric acid. Dehydroascorbic acid, an oxidised form of vitamin C, gives a relatively low response on the majority of chromatographic detectors, a...

Background: Apple is the most consumed fruit in many countries of the world and has very important role in individual's diet and health. The aim of this study was to determine the vitamin C (Ascorbic acid), organic acids (citric acid and malic acid), and phenolic compounds concentrations of apple cultivars grown in Khorramabad and Boroujerd cities. Materials and Methods: At this cross-sectiona...

Biosynthesis of Ascorbic Acid in Human Beings

Introduction.?It is generally recognized that human beings, monkeys and guinea-pigs do not synthesize vitamin C in their body. The difference in the time of onset of the symptoms ?f vitamin C deficiency were attributed to differences in age, sex and locality. The great extent to which pregnant women could tolerate vitamin C deficiency could not be explained. It has, however, been suggested that...
